Jill was asked by Chef Seth at della Francesca an organic restaurant on the island of Palm beach to provide him with a biscotti. This is what she invented! They are divine!

THE NANTUCKET COOKIE
Cranberries, local to Cape Cod and the islands flavor this whole foods cookie. Cranberries are not only high in Vitamin C, but a good source of fiber. The Nantucket is made with spelt flour, walnuts, gluten-free malt sugar chocolate chips, and stevia, so they are diabetic-safe, but not gluten-free. This cookie will be available beginning in the summer 2009. Do know that the cranberries, although grown organically have a little sugar coating, so there is a small amount of can sugar in this cookie.
