Family and many friends of Jill's on Worth Avenue, Palm Beach, look forward to her divine, inspired cookies at holiday times. Unfortunately for some in Jill's circle, those cookies are pure sugar and butter. Although Jill makes conscious food choices of eating and cooking vegan. sinning once in a while is part of her philosophy of "moderation in all things", and at holiday time Jill reverts back to childhood delights. With a family history of diabetes, Jill knows better, and has had to make some adjustments.
When Jill's sweet-loving uncle was diagnosed with diabetes, she invented a "safe cookie" that he could enjoy, which would not raise his blood sugar. This is the beginning of The Palm Beach Cookie Story.
A renowned artist, yoga instructor, vegan, whole foods chef, Jill used her culinary skills to create a delicious, complete, whole food cookie, which satisfies hunger, meets nutritional needs for an active life style, and that children will adore. The Palm Beach Cookie is protein and fiber rich, as well as a completely balanced nutritional supplement, and kids love them!.
Jill's aunt, who searches health food stores and specialty food shops for diabetic-safe sweets to satisfy her husband's cravings, encouraged Jill to make her cookies available in the market place.
Jill brought a few dozen cookies with her to a Kundalini Yoga Winter Solstice Celebration. There attendees gobbled them up, paying a hefty $1/cookie for the delectable yogic diet safe treats, (all vegan, some gluten-free). This was before she bought ingredients at wholesale prices!
Jill was amazed at how people responded to her healthy new cookie. This delectable treat is a complete food in many ways, providing protein, essential fatty acids, vitamins, enzymes and carbohydrates.
After an all night dancing party in Ft. Lauderdale, an hour from her home in Palm Beach, Jill and three friends were starved, They had plans to stop at a well known all night eatery once back in Palm Beach County. Then Jill remembered that she had brought a few cookies...well just enough to feed all the passengers one or two cookies each. That did the trick. Everyone was satiated, and there was no need to stop for nourishment. Jill then realized what a powerful food stuff she had created!
Yoga teacher, dula, Mindy Galamaga, uses The Palm Beach Cookie in place of meals on the go, to curb appetite, provide energy and needed nutrition for an active life. She told Jill that she had invented a diet using Jill's cookies, and would be her first testimony. But wait there's more...
During the arduous many hours labor, soon to be mother Ivy was craving food. It so happened that Mindy, who was assisting at the birth, had a small stash of The Palm Beach Cookie with her, and provided the laboring mom with all her nutritional needs to "get her through the night". As there was no food available at the hospital, during those hours, it was welcomed, appreciated, and helped with the birth claims both Mindy, the dula, and Ivy, the new mother, and healthy new baby Nova's last taste in the womb was filled with Jill's love.
Encouraged by her aunt, on Wednesday March 19, 2009 Jill went to Whole Foods and met assistant manager Nick, who gave her corporate contacts and told her she would be number 10,000 in line, when she asked about sampling her cookies in the store. Undaunted, Jill suggested to Nick that he just taste her cookie. He did, as did two nearby shoppers, who overheard her story. All three were amazed at the enjoyable taste and texture. On the spot, Nick volunteered to put in a word for Jill and her cookies. Jill left a message at corporate, as per Nick's suggestion. She has yet to hear from them. (This was two days ago and their message explained they were out of the office for a week). Jill knows these things take time and persistence.
On that day, in Whole Foods, Jill met Tory, the mother of Campbell, an eight year old, diagnosed with Diabetes Type 1, on insulin. When Jill heard about Campbell she immediately gave Tory a few cookies for her son to taste. Within hours Tory contacted Jill to create cookies for Campbell. Although Campbell is not fond of nuts, he never recognized the main ingredient of the cookie, loved the heart shape, and couldn't wait to eat more.
Three days later Tory and Campbell visited Jill in Palm Beach to collect a bag of cookies that Jill had made for Campbell. Campbell was reading his book, while his mother and Jill shared stories and recipes. All the while Campbell proceeded to eat the entire plate full of cookies (perhaps 15 or maybe 20 cookies)! At the first reading Campbell's PH was fine, and we are awaiting the results from blood sugar tests and further PH tests.

Renaissance woman, Jill Karlin is a world renowned artist, yoga instructor, and whole foods chef. Jill has exhibited her paintings in Boston, Palm Beach, New York, Vermont, California, and New Delhi. She owned an art gallery and center of consciousness on Worth Avenue, Palm Beach for six years, and provided custom art works for people the world over, as well as educating them about environmental architecture. At Jill's she hosted monthly art openings, poetry readings, and yoga classes weekly.
Jill will be exhibiting paintings this summer in Nantucket at Gallery Blue on Old South Wharf.
Jill teaches Yoga on Palm Beach at Chilean Beach. She has taught Yoga to corporate executives, professional athletes, rock stars,their wives, an astronaut who walked on the moon, royalty, but mostly regular folks.
She became passionate about the environment when she met her environmental architect husband Lee Porter Butler (Jan 3, 1940- Novemebr 22, 2005) and continues to further his work, Ekotecture, 100% self -sustainable architecture. Her devotion to a safe, clean earth extends to the food we eat, and Jill envisions a time when all people will be growing their own foods in their elegant, safe, Ekotecture pods, sharing stories while eating her divinely inspired cookies.
